An Evening At Barn By Biota

 

Nestled in the rolling hills of Kangaloon is a hidden gem, concealed in a rustic yet minimal barn with incredible views across the region. This is James Viles' new project, Barn By Biota, which showcases the incredible local produce The Highlands has to offer, in an immersive and original dining experience. Guests are greeted by James and the smell of Redleaf lamb cooking on open coals and handed a peach and thyme cocktail while they mingle in the dappled shade.

The table setting within Barn is one sprawling table, which brings guests closer together throughout the evening. This dining experience is one where you can put the phone away, and really enjoy the company of those around you, while sampling incredible flavours. The courses are served in a share-plate style, allowing guests to have a shared gastronomic experience. Each course was incredible and had distinctive signature taste, complemented by an array of softer flavours.

During a brief interlude from dinner, James took us on a personal tour of the property, explaining the vision for Barn By Biota. As we walked through the orchard and past the beehives and crops, it’s easy to see why he feels such a connection to this beautiful place.

The Nitro Passionfruit Pavlova for dessert was one of the standout courses and finished this original dining experience with a theatrical flourish. The kitchen, which can be easily seen by diners on one side of the barn, was flooding the space with liquid nitrogen, as James stood creating these incredible desserts. It was a light, yet creamy and delicious way of ending such an unforgettable gastronomic experience, right here in the Southern Highlands. ‘Barn’ is such a special experience, and it’s wild and slightly rough around the edges approach to world-class dining is refreshing and truly memorable.
